Short answer: For 30 guests at a drinks or appetizer party, plan three mini banh mi per person, which is 90 pieces. Cut 30 standard rolls (25 cm / 10 in) into thirds of about 8 cm (3 in), or cut 10 full French baguettes into nine pieces each. Fill each mini with one third of a full roll's filling: roughly 33 g of baked tofu, a teaspoon each of vegan mayo and pâté, pickles, cucumber and cilantro. Assemble no more than an hour before serving, and keep pickles well drained.
Why mini banh mi work as appetizers
A full banh mi is a meal, but cut small it becomes one of the best party bites there is: crunchy, fresh, savoury and easy to eat standing up with a drink in the other hand. The bright colours of carrot, cucumber and cilantro look good on a platter, and because the filling is vegan, everyone at the party can eat it without a separate tray.
The trick is that a sandwich designed to be eaten immediately has to hold for a while on a platter. That means drier fillings, well-drained pickles, a fat-based barrier against moisture and careful timing. Get those right and the bites still crunch 45 minutes after you set them out.
How many pieces you need
Three pieces per guest is a reliable figure when the minis sit alongside a few other snacks. If they are the main food at an evening event, increase to five per guest, or 150 pieces for 30 people. If they are one of many dishes at a long buffet, two per person may be enough.
Our quantities follow the same per-roll formula as our full-size party guides: one roll's worth of filling makes three minis. For 90 pieces you therefore need filling for 30 rolls.
| Ingredient | Per mini (1/3 roll) | For 90 minis (30 rolls) |
|---|---|---|
| Bread | 8 cm (3 in) piece | 30 rolls of 25 cm, or 10 French baguettes |
| Firm tofu, raw | about 33 g | 3 kg (8 × 400 g / 14 oz blocks) |
| Carrot + daikon, raw | about 17 g | 750 g carrot + 750 g daikon |
| Cucumber | 10 g | 900 g (about 2–3 English cucumbers) |
| Cilantro | 1–2 small sprigs | 120 g |
| Vegan mayo | 1 tsp (5 g) | 450 g (30 tbsp, about 1⅞ cups) |
| Vegan pâté | 1 tsp (5 g) | 450 g |
| Fresh chili | 1 thin slice | 90 g |
For the pickles, use 750 ml water, 375 ml rice vinegar, 150 g sugar and 15 g salt for the 1.5 kg of carrot and daikon. That is our standard ratio of 500 ml water, 250 ml vinegar, 100 g sugar and 10 g salt per kilogram of vegetables.
Choosing and cutting the bread
The ideal bread is light, with a thin crackly crust and an airy crumb, like a Vietnamese baguette. Dense sourdough is too chewy for a bite-sized piece. Outside Vietnam, demi-baguettes from a supermarket bakery or soft French rolls are the closest match. If you have a Vietnamese or Asian bakery nearby, buy rolls there.
Cut the bread before filling, not after: cutting a filled sandwich squeezes out the filling and crushes the crust. Slice each 25 cm roll into three pieces of about 8 cm, then split each piece lengthwise, leaving a hinge on one side so it holds together like a small pocket. If you are using full baguettes, cut each into nine pieces of about 7 cm. Remove a little crumb from the inside with your fingers to make room for the filling; this also keeps the bites from being too bready.
Re-crisp the cut pieces at 200 °C (400 °F) for 3 minutes, then let them cool for 10 minutes before filling. Warm bread steams and softens the filling; cooled crisp bread holds up much longer.
Fillings that hold on a platter
Mini banh mi need slightly different fillings from full-size ones because they wait before being eaten:
- Tofu: bake it until firm and browned, then cut into small batons about 1 × 1 × 6 cm. Dry tofu holds; wet or saucy tofu leaks into the bread.
- Pickles: cut the matchsticks shorter, about 4 cm, drain thoroughly and pat dry on paper towels.
- Cucumber: cut thin batons and remove the watery seed core with a teaspoon.
- Spreads: spread the vegan mayo on one side and the pâté on the other, edge to edge. The fat acts as a barrier that keeps moisture out of the crumb.
- Herbs: use small cilantro sprigs and add them last so they stay perky.
- Sauce: skip drizzling soy sauce over the bites. Season the tofu well instead, and offer a small bowl of chili sauce on the side.
Our plant-based fillings section has detailed methods for pressing and baking tofu so it stays firm, and our sauces section covers vegan mayo made from aquafaba or soy milk.
The assembly line
For 90 pieces, an assembly line with two people is far faster than making each bite from start to finish. Here is a workable order:
- Person one spreads mayo and pâté on all opened bread pieces, lined up on trays.
- Person two adds a tofu baton, then a small pinch of pickles and a cucumber baton to each piece.
- Both finish with cilantro and a chili slice, then press each bite gently closed.
- Secure with a short cocktail pick if the bites will be passed around on trays.
With practice, two people can assemble 90 pieces in about 30 to 40 minutes once everything is prepped. Start assembling no more than an hour before guests arrive, and assemble a second batch midway through the party if the event runs long.
Timeline for a party of 30
- Two days before: make the pickles, vegan mayo and pâté.
- One day before: press, slice and marinate the tofu; wash and dry the cilantro.
- Morning of: bake the tofu across several pans, cool, cut into batons and refrigerate. Cut and seed the cucumber.
- Two hours before: cut and hollow the bread, then re-crisp and cool it.
- One hour before: assemble the first 60 pieces. Keep the remaining fillings chilled for a second round of 30.
Three easy variations
Once the basic bite works, it is easy to offer a second or third flavour on the same platter, which makes the spread look more generous without much extra work. Each variation below replaces the tofu in some of the 90 pieces, so the total quantities of bread, pickles and herbs stay the same; you simply buy less tofu.
- Lemongrass mushroom: sauté 1 kg of sliced king oyster or chestnut mushrooms in batches with minced lemongrass, garlic and soy sauce until dry and browned; they cook down by roughly half. That replaces the tofu in about 30 minis, so cut the tofu to 2 kg (5 blocks).
- Spicy tofu: toss a third of the baked tofu batons in a little chili sauce just before assembly and top those bites with an extra slice of chili. Mark the spicy platter clearly so guests know which is which.
- Sweet and simple: for children, make a few bites with vegan mayo, cucumber and a light sprinkle of sugar, a playful nod to the butter-and-sugar bread that Vietnamese children grew up with.
Keep each flavour on its own platter or in its own row. Mixing them randomly confuses guests and slows down the table.
Serving and holding
Arrange the minis cut-side up on flat platters, packed closely so they support each other. Do not cover them with cling film, which traps humidity and softens the crust; a clean, dry tea towel draped loosely is better if you need to protect them for a few minutes. Keep platters out of direct sun.
Because the fillings are perishable, follow the general food safety guidance used by agencies such as the USDA: no more than two hours at room temperature, or one hour above 32 °C (90 °F). Putting out platters in waves solves this naturally. Leftover components keep in the fridge for a few days; assembled minis are best eaten the same day.

Frequently asked questions
How many mini banh mi per person?
Three per guest when they sit alongside other snacks, five if they are the main food at an evening event. For 30 guests, three each means 90 pieces.
How do I stop mini sandwiches from getting soggy?
Re-crisp and cool the bread before filling, spread mayo and pâté edge to edge as a barrier, drain the pickles well, and assemble within an hour of serving.
Can I use slider buns instead of baguettes?
You can, but they will be softer and sweeter and will not have the crackly crust that defines banh mi. Cut demi-baguettes or soft French rolls are much closer.
How far ahead can I assemble the bites?
About an hour. Make all components a day or two ahead, but put the bites together close to serving time, in two waves for a long party.
How many baguettes for 90 mini banh mi?
Ten standard French baguettes cut into nine pieces each, or thirty 25 cm (10 in) rolls cut into thirds.
